Poor Toms steep ten botanicals in Australian wheat spirit, which is then single-shot distilled in a 200 litre, Müller copper still. Crafted with an eye on refreshment and drinkability, Sydney Dry is perfectly showcased in a strong G&T, a Gin and soda, or a Dry Martini. Blumer recommends you go strong, with a very dry tonic, a fresh strawberry and lots of ice to bring out the red fruit flavours, “It’s still a dry gin so it’s not sugary. That’s why we serve it with a strawberry in a G&T. That’s when it starts working its magic.”

About the maker

Spurred on by their mutual love of craft Gin, these two ex-schoolmates – with zero combined experience in distillation – pooled all every penny they had and ordered a small 200 litre copper still from Germany.

6 years on and many awards later, Poor Tom’s distillery is still in Sydney but at a much more grandiose scale. Their Sydney Dry Gin scooped Gold at the prestigious San Francisco World Spirits Competition (2017), one of the most globally respected spirits competition inn the world.
