Ota Shuzo Dokan Umeshu Sake

This Dokan Umeshu is made by infusing a 1 year old sake with ao-ume [green ume] and korizato [‘ice sugar’ | rock sugar] for about 6 months. The prefectures they source the ume from are famous for their ume varieties Completely additive free with no additional colour, aromas, flavours or acids added, and relies purely on great ingredients and technique. Also conservative with the sugar they add to their umeshu as they want to achieve a drink that has the deliciously tart Ume flavours balanced by moderate sweetness. The flavour is enhanced by beautiful sweet marzipan & stewed fruit aromas.

About the maker

Ota Shuzo was created by the ancestors of the 15th century Samurai warrior-poet and military tactician Sukenaga Ota (1432-1486) in Shiga prefecture.

Ota Shuzo make seriously impressive sake and are also now making great umeshu. Umeshu is made by infusing sake with Ume and sugar. And what is Ume? Ume is a fruit that comes from the ‘Prunus Mume’ tree which is cultivated for both its fruit and flowers. These people have so much talent and artistry in everything they do.
