Carbonated lightly. Similar to that of a pet-nat. Dry and lengthy fruit tannins. The raspberries are imported from New Zealand, working with them in such a way that leaves only the flavour and colour. The chamomile is sourced and cupped by the tea sommelier. Depending on seasonality it is sourced from either Australia or Croatia. Serve chilled 2-4 degrees and suitable with any course (similar to Pinot). Vegan friendly. Carbonation lasts 4-5 days in fridge with a stopper.

Ingredients: Whole raspberries, chamomile, Murrary River salt, organic cane sugar, verjus, filtered water. Approx. 2.5g sugar per glass.

Storage: Preferably refrigerated storage to preserve the natural ingredients, otherwise, wine cellar temperatures.

Partners in crime William Wade and Aaron Trotman have teamed up to elevate the status of non-alcoholic drinks in Australia. Following in the huge footsteps of Seedlip, they poised themselves the challenge of creating a restaurant calibre beverage, bottled ready-to-drink and market it successfully. The result is NON. NON is essentially a reinvented tisane (infusion of dried fruits, herbs and spices in hot water). The steps in making the beverages include roasting, dehydrating and to sous vide the fruit. Then it's all steeped in hot water with herbs and spices, filtered and carbonated overnight. The flavour combinations for each type of bottle were constantly refined about 20-30 times. Each drink presents like a pét-nat.
