Starting as a little side project to his like as a chef, Brendan Cato sources high quality fruit from various hot spots around New South Wales.
Even after working as a chef, Brendan already has experience working vintages in France and Italy since 2014 and so spinning his own up was a natural progression. The fruit is hand-picked from sites in Orange, Mudgee, Canowindra and Brendan's first two vintages were done using his mate's equipment at Mecca Coffee in Sydney's Inner West. Carto wines are a perfect balance between complexity and drinkability. The wines are really outrageous value for what they offer in terms of flavour, liveliness, on point acidity and made to be sipped young.See the Carto collection here
