The Sauce is a new vin de soif from Margaret River based Sarah Morris and Iwo Jackimovicz of Si Vintners. This wine is a field blend of whole bunch Cabernet Sauvignon, Malbec and Pinot Noir co-fermented for two weeks. Bright, fruit driven and refreshing. Pressed and finished in a combination or old barrels and stainless steel. Easy drinking, with full rounded palate. Whole bunch stalky tannins keep it structured.

About the maker

Si Vintners, with the S and I for Sarah Morris and Iwo Jakimowicz, have always taken a natural approach to life so the organic management of their vineyards has become an extension of that.

Surviving a weevil outbreak in 2013 with only the use of organic treatments and now with hardier vineyards, re-affirms their own mindset in this style of farming and winemaking. Iwo and Sarah emphasise the fact that nothing is removed and nothing is added, aside from a small amount of sulphur at bottling. Notwasted have tried many of vintages and they are always blown away by their unique characteristics and deliciousness.
