What started as a passion project, Sassafras quickly catapulted into the lime light after featuring on the wine list of Australia's Noma pop-up. Canberra-based Paul Starr produces exceptionally delicate wines year in year out.

Sassafras Wines, run by Paul Starr out of Canberra produce exceptionally delicate and elegant wines. Their most popular and renowned wine is the ancestral method sparkling, but they also make some pretty light-hearted table wines from Italian grape varieties. The wines are now made at Nick O'Leary's shed in the Hall area of the Canberra wine region and all sourced from sustainable vineyards in the NSW/ACT area.
