Even for winter. Light-medium bodied, lots of baked spices, lots of texture, tart cherries and blackcurrants. Chill it lightly and decant for 15 minutes. Slips down a treat.

About the maker

With his modest 5 hectares of vines in western Languedoc, Pierre Rousse's winemaking is very simple and exponentially delicious.

From Pierre's vines you can see the Pyrenees in the distance. The soils are plentiful of limestone and two plots have been farmed organically for ten years, with a constant focus on biodiversity. In the cellar, the wines are made simply. Some years the whites are macerated and the reds are often a mixture of Pinot Noir, Cabernet Franc, Cabernet Sauvignon and Merlot fermented as whole bunches. The wines are alive, bright and fruit prominent that all slip down with little questions asked.
