Project B is Brendan Hilferty's little wine and Mead project based out of Newtown, Sydney.
Using honey from his own local bee hives, Brendan is making both straight mead and a honey grape co-ferment. Whilst these numbers are experimental and playful, they are down right delicious and natural. With only a couple hundred of bottles made, it's an absolute treat to be working with such local and fun drinks.
