Babche Wines

Niki is part of the Victorian wine revolution, a young bootstrapped winemaker who is both working the fields in line with the rhythm of nature and in the cellar making wine like grandma would have.

For Niki it begins with the fruit. She's a staunch believer that for winemakers tending to the fruit they use in the cellar is vital as it leads to a more intimated knowledge of what is at hand. Her fruit comes from a 25 acre vineyard she sees to organically on the Bellarine Peninsula. Planted to  Chardonnay and Pinot Noir in 1994 by the vineyard’s owner, Nick Norgard. The vines lay on slopes of sandy loam, dark clay, and iron stone on the edge of Corio Bay. In the cellar Niki uses gravity fed methods, hand basket presses and none of the wines are filtered or fined with any preservatives. This is as natural wine as they come.
