Similar to that of a cider or fruit beer, the delectable NON 2 is lightly carbonated and zero alcohol. Australian Packham pears are treated with different methods to create a complex profile that gives way to a big rounded pear taste. Kombu from Hokkaido. Japanese kombu allows for a minerality profile that lifts the salinity and rich fruit notes. Black tea, aromatics and spices bring complexity and structure. Serve chilled or even as a hot cider. Pair with any course, great with meats and cheeses. Carbonation lasts 4-5 days in fridge with stopper and vegetarian friendly. 

Ingredients: Whole pears, kombu, ginger, cardamon, peppercorn, star anise, black tea, clove, honey, vanilla, olive brine, verjus and filtered water.

Storage: Preferably refrigerated storage to preserve the natural ingredients, otherwise, wine cellar temperatures.

Partners in crime William Wade and Aaron Trotman have teamed up to elevate the status of non-alcoholic drinks in Australia. Following in the huge footsteps of Seedlip, they poised themselves the challenge of creating a restaurant calibre beverage, bottled ready-to-drink and market it successfully. The result is NON. NON is essentially a reinvented tisane (infusion of dried fruits, herbs and spices in hot water). The steps in making the beverages include roasting, dehydrating and to sous vide the fruit. Then it's all steeped in hot water with herbs and spices, filtered and carbonated overnight. The flavour combinations for each type of bottle were constantly refined about 20-30 times. Each drink presents like a pét-nat.
