Sitting at the highest point of the grand cru Soave, entering Filippo Filippi's estate is like entering a green oasis where time has stopped. It’s where his volcanic soils, organic farming and relaxed nature come together to produce white wines of textural completeness.
Fillipi wines capture the unadulterated expression of his vineyards and tell the story of old vine Garganega like no other. His vineyards are divided into distinct areas, defined by soil type and bottled accordingly. Simply put, Filippi wants the features of the soil to be felt in his wines. He was the first in Soave to be certified organic in 2007, and soon followed with biodynamic certification. A critical component in Filippi’s wines is the use of organic compost that helps keep the soil cool so the grapes ripen slowly. He says: "Only like this can you make authentic Soave", meaning a dry white tasting round and ripe but importantly lively and crisp.See the Cantina Filippi collection here
